Banana Bread

My mom loves banana bread, dad used to buy her banana breads everytime he passed by Goldilocks. Since I live here in Manila where bananas are abundant all year round every week we have bunch of bananas on our dinning room table waiting to be gobbled up. I thought to myself I could make one how hard could it be...


So the quest for banana bread recipes started, I used to make one using Maya box mix where you could bake it with the handy dandy oven toaster (before I didn't have a oven). I was really easy I just oven the box mix oil, water and 2 mashed bananas and woahla! in 15 minutes or so banana bread to enjoy taste quite nice actually...

After tons of boxes of banana mix, I finally got the courage to start thinking of doing it from scratch. I searched the net, browse through my baking book collections and tried soooooo... recipes that I've just had it! Then finally as I was browsing though my newly acquired baking book of that time Nigella Lawson's How to be a Domestic Goddess, I tried it once it was a hit with my family everybody loves it, I never tried making it any other way. Nowadays whenever there's overripe bananas on the table I always stach them away and makes it into a banana bread. At first I was a bit hesitant to try it coz the recipe calls for sultanas. And I thought sultanas = raisins right? well, nobody likes raisins in my family. I did it anyway and so far no regrets though everytime someone asks me what are those I always answer Sultanas, why? and the only reply that I get is a shrug and a huge bite on the bread, so that's the end of discussion.

To tell you a secret: I never liked it though, I always nibble on small thin slices only. I don't know why I never seem to like taste of banana bread though I love eating just riped bananas never liked the mushy kind (hmmmm... maybe that's why)

So I tried baking some of the batter into cupcakes so there's only small portions of it. To make them more eye catching, I got my left over stach of frosting and ganache hidden in the freezer, I thawed them out and whipped them up, sladder on top of the banana cupcakes and sprinkle some of the assorted sprinkles (I bought them as an impulse buy coz I thought they were cute haven't used them ever since, I finally got to use them!) Something colorful on top.

Truth is I still not a big fan of them but still do try to eat some coz fruits are good for the body. Heck we have to make certain sacrifices to stay healthy.
