Filipino Style Chocolate Caramel Fudge

It's been quite a while since I managed to post anything, to be honest I was experiencing what I think is a quarter life crisis. This year I managed to hit the big 3-0 and I was feeling quite blue and was wondering what will happen to my future. Being single and in my thirties is not something I thought would ever happen to me, not that it's bad but I do get lonely from time to time. Now I see to it that I always surround myself with my friends and my friends and I often have a girl's night out every other week. 

When I managed to get over my depression, our kitchen is undergoing renovation, all my pans and baking peripherals are all boxed up! I manage to survive not baking for a MONTH! can you imagine? However last Saturday night, after being sick and sleeping off the sickness the whole day, I was suddenly energised! I went to tons and tons of boxes to look for my stuff. After an hour or so of searching I found my baking pans. I was craving for some chocolates and I wanted it fast! ^_^ 
What's better than chocolate cake you might ask? Well..Chocolate drench in caramel sauce! I have a stash of caramel sitting idly at the back of the fridge, few seconds in the microwave and its all molten and gooey. As soon as my cakes are out of the oven, I quickly poked it with toothpick and pour the caramel sauce all over it while gently coaxing it the cake. I wrapped each cake with cling film while still in the pan and went to sleep. Yup I left it at room temperature cooling off. Since it's rainy season here in Manila, I wasn't scared that it might get spoiled.

The next morning, I got up early so excited on checking up on my cakes. They look all sticky and smell so good! I stick them in the fridge and quickly whipped up my chocolate frosting. It seems like it's not enough to cover the whole cake but fear not perceiver! You'd get to cover the whole thing eventually. The frosting is on the thin side since its a bit sweet and my family is not so keen on very sweet desserts. however, if going to make this for a typical Filipino friends with sweet tooth then I would suggest making the recipe 1 1/2 quantity, yes its that good!
